Smoothies have long since shed their reputation as run-of-the-mill, fruit-based, slurpable diet foods. The latest generation of smoothies uses nutrition as medicine, homing in on specific health outcomes like improved gut health, immune support, or even better sleep. Many of these recipes have embraced collagen and bone broth benefits, while some have incorporated fermented foods and even cannabis-based ingredients.

Gazpacho Smoothie

In Spain, gazpacho is typically served chilled in a glass rather than a bowl, making this classic dish the perfect base for a savory smoothie. Adapted from Bon Appetit’s Sippin’ Green Gazpacho, our version integrates the alkalizing twist of apple cider vinegar and uses spinach as its green base. Make this smoothie the night before so that the flavors have time to meld and chill.

Good Morning Gazpacho

½ English hothouse (seedless) cucumber, chopped

½ smashed garlic clove

1 cup baby spinach

½ cup total of chopped cilantro, parsley, and/or mint

1 to 2 tablespoons apple cider vinegar

Sea salt

3 tablespoons good quality extra-virgin olive oil

Blend cucumber and garlic together first, adding just enough water until they form a smooth and thick puree. Excluding olive oil, add in remaining ingredients and blend again until smooth. With motor running, slowly drizzle in olive oil in order to bring the mixture into a velvety emulsion (adding it too quickly or all at once will leave you with an oily, separated mess). Generously season with salt and adjust acidity with more ACV if needed. Add enough water to bring smoothie to a drinkable consistency. Allow flavors to combine in the refrigerator overnight.
